Today I had the frozen Black Bean & Corn Enchiladas, zapped in the microwave to a saucy perfection. Quite tasty, and most importantly, filling. They even snuck some tofu in there (it is a vegetarian offering after all) which I didn’t even mind, so slathered in red sauce was it.
I added a little hot sauce of my own to kick it up a bit, not to make up for any lack of flavor. With 4g of fat (and none of that evil trans fat) and a two-buck price, this is a keeper for a quick, inexpensive, and tasty lunch option.
